Our chief Guide and founder Stephen McPhilemy is one of Ireland's leading experts in providing Falconry experiences. Stephen is not a falconer, but introduced his Rick Steves Ireland tour-guests and ultimately his mentor Rick Steves to falconry in 2013 at the excellent Ireland School of Falconry at Ashford Castle, many thousands of Rick Steves tour-members and readers of Rick Steves book have now enjoyed the ancient art of Falconry at Ashford Castle since this discovery and introduction. Stephen then went on to form his own
School of Falconry at Milltown House which ran from 2019 to 2026, Stephen has since sold his 50% share in the partnership to focus on other projects (such as converting
his aviaries on Dingle Bay to luxury dog-kennels to cater for his growing Irish Wolfhound pack) but he still retains a strong fascination and appreciation of falconry and its always a top priority to introduce our tour-guests to falconry at the many excellent falconry schools through Ireland.
